Gluten & Dairy Free Banana Muffins

Gluten & dairy free banana muffinsThis is our daughter’s favorite muffin recipe. Due to her gluten and dairy intolerance, there are many foods that upset her belly. These gluten and dairy free banana muffins, on the other hand, make her belly happy. Mommy is happy too because they are the perfect wholesome snack that is low in sugar, easy to make and super delicious. We found this recipe and with a few simple changes, made it gluten-free, dairy-free and much healthier. This recipe makes approximately 24 mini-muffins.

So how do you make these gluten & dairy free banana muffins?

3 medium bananas mashed
1/2 cup coconut sugar (We use this one.)
1 egg
1/2 cup almond flour (We use this one.)
1 cup gluten-free oat flour (We use this one.)
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt

In a large mixing bowl, combine the bananas, coconut sugar and egg. In a separate bowl, combine the almond flour, all-purpose flour, baking soda, baking powder and salt. Add dry ingredients to wet ingredients and mix thoroughly. Lightly spray a mini-muffin pan with extra virgin olive oil. Fill mini-muffin pan approximately 3/4 full with muffin batter. Bake in a 375 degree oven for 10 minutes.
