Mango Salsa

My husband is a phenomenal cook and is far more creative than me when it comes to creating fun, new dishes. He whipped up this delicious mango salsa and served it with mahi mahi. You could serve with a variety of foods such as chicken, tilapia, tortilla chips, etc.






2 large mangoes – diced

1/2 red pepper – diced

1/4 yellow onion – diced

1 tsp garlic – minced

2 Tbsp fresh cilantro – chopped

2 Tbsp white wine vinegar

2 Tbsp Extra Virgin Olive Oil

Salt and pepper to taste


In large bowl, combine all ingredients and stir. Doesn’t get any easier than this!
