Spicy Sweet Potatoes

Spicy Sweet Potatoes 2We had some friends over for dinner last night and she recommended a very tasty dish! She has recently had to remove a lot of foods from her diet, but this is a dish almost anyone can enjoy! The original recipe called for brown sugar, but I used coconut sugar instead. It was still very delicious. I also want to add this is not terribly spicy but simply has a bit of a kick. I am not good with spicy and I was able to easily handle this and loved it. Enjoy! This dish is gluten, casein and egg free.


3-4 large sweet potatoes, cubed with skin

2 Tbsp olive oil

2 Tbsp coconut sugar

1 tsp chili powder

1/2 tsp salt

1/4 tsp cayenne pepper

Toss sweet potatoes and oil by hand in a large bowl. Add remaining ingredients; toss to coat. Transfer to a 9 by 13 pan.  Bake, uncovered, at 400 degrees for 40 to 45 minutes or until potatoes are tender, stirring every 15 minutes.  The stirring is critical, so set your timer to stir every 15 minutes.
